Now that we’re eating lunch at home everyday, it seems boring to serve my boys the same old bagel and cut up fruit I default to for school lunches. Plus let’s face it, that’s not what I want to eat day in and day out! But I also don’t want to fuss over another cooked meal. Bring on fritters, the perfect quick and easy Covid-19 isolation lunch. These Broccoli Cauliflower Fritters are our latest favourite version.
This recipe came about because we’re now down to just freezer/canned produce. Anticipating not shopping frequently, I bought some canned corn and a couple bags of frozen veggies, including something called ‘Royal Mix’ which is Broccoli and Cauliflower. For this recipe I heated and chopped them up and added to my usual fritter batter in lieu of corn. (These corn fritters are also delicious).
We’re trying to be as adherent as we can to social distancing guidelines. We’re trying to grocery shop only once every two weeks. We are also taking advantage of concierge order an pick up. This way of shopping is very popular in our town. This time we had to wait 2.5 weeks for our next pick up at The Independent. Hence we’ve run out of fresh produce and are working through the backups. Hooray for freezers and like fresh veggies. Hooray for frozen and canned fruit.
