    Instructions
    1. Peel and chop the pineapple, removing eyes.
    2. Heat oils in a large pan. Add onion, chillies, turmeric and cardamom and cook on low heat until onions are translucent (about 5 minutes).
    3. Add garlic and mustard seeds and saute 2 to 3 more minutes until the onions are a bit browned.
    4. Add the pineapple and season with salt.
    5. Add the coconut milk. Cover and simmer until pineapple is soft (10-15 minutes, or just 5 minutes if using canned pineapple).
    6. While the curry simmers, prep and combine all the Sambal ingredients in a small bowl. Adjust salt seasoning to taste.
    7. Serve warm over rice with Sambal on the side.
