  1. Heat oil in a large pan over medium heat.
  2. Add the onions and saute until translucent.
  3. Add the garlic, ginger, cumin, mustard seeds and turmeric. Stir fry until fragrant (being careful not to take it too far or you’ll end up with a bitterness from the cumin and mustard seeds).
  4. Add the cabbage, cayenne, salt and water. CFover with a lid and reduce heat to medium-low. Cook for 5 min until the cabbage has softened.
  5. Remove lid and continue to cook until any remaining water has evaporated.
  6. Remove from heat. Add the cilantro and the juice from 1/4 lemon and toss to combine.
  7. Serve with rice or with your favourite Indian-style flatbread.
