No Knead Rustic Bread
This is hands down the easiest bread recipe I have ever encountered! No Knead Artisan Bread that will impress all your diners! All you need to do is mix together five staple ingredients in the morning and then bake it just in time for dinner. It’s that simple!
The end result is a beautiful artisanal looking loaf that resembles a sour dough you might find at an artisan bakery….and you won’t even have broken a sweat.
This recipe is modified from this one from ‘The Baker Chick’ which I came across on Pinterest. As usual I’ve added some whole wheat flour to the mix and simplified even further by reducing the rising time. This original – along with others I’ve come across – call for the use of a Dutch Oven which I don’t have, so I use a Corningware casserole with great result. The key is to preheat the casserole and then bake with the lid on so that the bread stays moist before removing the lid at the end to achieve a crunchy crust.
This has quickly become a staple for my family served with soups and chilli.

INGREDIENTS
2 CUPS ALL PURPOSE FLOUR
1 CUP WHOLE WHEAT FLOUR
1 TSP SALT
1 TBSP YEAST
1 1/2 CUPS WARM WATER
DIRECTIONS
Mix all ingredients together in a large bowl until it resembles a wet dough. Cover with plastic wrap and let rise for minimum 2 hours, preferably 4 hours or more.
Turn out onto a floured surface and shape into a round. Let sit.
Preheat oven to 450 degrees. Place casserole in oven while preheating.
Put dough into the casserole and bake covered for 30 minutes. Remove lid and bake for an additional 15 minutes until browned.
Cool on rack and enjoy with your favourite meal.
