Simple Homemade Granola Bars

IMG_4941 (2)These Simple Homemade Granola Bars really could not be any easier! With just four ingredients, they literally mix up in minutes. A great thing to bake and eat with kids (my son aged two and a half made these ones) and make an excellent addition to lunch boxes for grown ups and kids alike.

I got the idea from a recipe my sister-in-law cut out of the Burlington Post. I wanted to try them but couldn’t remember anything but this flavour combination (pretty sure there was baking powder in the original recipe). The bars came out great despite just one easy binding agent and, once cooled, cut into nice even bars.

The combination of white chocolate is mouthwatering as always, but these would work just as well with any combination of nuts and dried fruit. I’m doing walnuts and raisins next!

INGREDIENTS (makes 1 dozen 1×2″ bars):

2 CUPS QUICK OATS

1/2 CUP CONDENSED MILK – Half a can. The rest can be used for a different batch or, for a truly decadent morning, try it instead of cream in your coffee!

1/2 DRIED CRANBERRIES*

1/2 CUP WHITE CHOCOLATE CHIPS*

* Try any combination of chocolate chips, nuts and dried fruit for a varieties of simple homemade granola bars made to your taste

DIRECTIONS

Mix all four ingredients in a bowl.

Grease a 9×9 baking dish and press mixture evenly into the pan.

Bake until just starting to brown – between 30-40 minutes.

Let cool before slicing.
