Corn Fritters

Corn Fritters, in January? I know, it’s weird to be posting a corn recipe in the middle of winter. But I found some corn on the cob marked down to $1 on the sale produce rack (which I always check for deals on fruit and veg so I can do my part in saving it from the landfill!)
I used some in Jumble-aya, which we have brought back into circulation thanks to the local Food Basics which now carries Yves Veggie Sausages. But I had quite a lot leftover. So I decided to try something new as an accompaniment to our favorite Broccoli soup.
Quick, simple and delicious! All three of my boys gobbled up these Corn Fritters at dinner time. I was fighting off grabby little hands while I tried to grab a quick picture for this post. Then I literally had to hide a couple out of sight so that there would be some left for when my husband and I ate our dinner a bit later on.
If you’re a parent, you’ll appreciate how exciting it is to discover something the whole family can enjoy. Event better when it’s all pantry ingredients. This is another one to file away for a quick meal when the fridge is bare!
This recipe makes a dozen (or so). Next time I’ll be making a double batch so the kids can satisfy themselves and I can send them in school lunches too. I can confirm that they taste pretty good cold too (I got hungry waiting for my husband to get home).
